We order old stewing hens from a humanely pasture-raised family farm in GA State. We use HALF OF ONE WHOLE OLD HEN to make this meal. Because of their non-GMO diet and daily pasture move and exercise, so the birds are typically lean animals. You should not anticipate a lot of meat on these birds, as they are best used for slow-cooking or stewing to make nutritious soup or stock! See pictures below for main ingredients.

  1. This herbal soup is absolutely amazing! When it’s served after boil, we can smell the rich aroma of the herbs and hen, which is incredibly tempting. The old hen isn’t overcooked, but has a nice chewy texture enable to tell the bird was naturally raised for a long time in farm. The slow-cooking process allows the hen to absorb the nutrients in the broth, leaving it with a subtle medicinal aroma and umami flavor. The soup is light yet flavorful. The addition of red dates and goji berries adds a sweetness and nutritional boost. Half a hen is quite generous, and it comes with thick rice noodles. Our family scrambled for the meal, which was incredibly warming and comforting. This dish is fantastic for both its flavor and its health benefits. Highly recommended!
