A fermented veggie burrito is a unique fusion dish first created by Pre-made Meal Kit team. It merges Chinese preserved/pickled radishes and fermented pickled mustard with the well-known format of a Mexican burrito, incorporating brown rice, beans, tofu sheet and a variety of other fillings.
Preserved radish, aka dried radish, pickled radish or “luobogan,” refers to a variety of daikon radish that has undergone a drying process and is normally seasoned; it has a crispy texture.
Fermented pickled mustard, Chinese name “Zhacai”, aka Sichuan preserved vegetable, is a kind of pickled mustard stem, originating in Chongqing City, China. It is produced from the stem of a mustard plant, referred to as “qingcaitou”. This process involves wind-drying, salting, and pressing to remove moisture, followed by seasoning and fermentation. The final flavor profile is characterized by its crunchy texture, savory-sweet taste, and mild spiciness.
To reheat, simply bake in oven at 350°F for about 10 minutes to ensure heat through, or microwave them to serve.
